Maharashtrian dish,  made from sprouted moth beans. That is topped with spicy gravy, fresh onion and farsan. This is served with pav. Misal pav is popular Maharashtrian breakfast and Mumbai street food. Can be served as Breakfast / snack or meal.  Ingredients  For Usal: • 2 cups Sprouted matki (Moth beans) / any sprouts • 1/4 tsp turmeric powder • Salt to taste For Kat / Raasa (thin Spicy Gravy): 1 onion -finely chopped 1 tomato finely chopped   2 green chillies -finely chopped 1 tsp Ginger chopped  1 tsp garlic chopped  1/4 tsp Turmeric powder (haldi)  2 tsp red chilli powder 1 tsp Garam masala powder   1 - 2 tbsp Oil  1/2 cup coconut Dry (Grated or cut to small pieces)  to taste Salt  To serve:  Ladi pav or pav Buns or slice bread   1-2 Onions very finely chopped  Coriander leaves, very finely chopped  Lemon ,cut into small wedges • Farsan / Mixed Namkeen / Mixture.  To prepare Matki Usal:-  Prepare sprout Matki -  Wash and soak matki(moth beans) for 6-7 hrs in water and wash it once

 The panipuri originated from  region of India, present day South Bihar where it is also known as phulki.  It is originate from Varanasi,Bengal and specifically Kolkata, Phuchka  considered to be the king of this variety of snacks, compared to its cousins like golgappas or panipuris. The English meaning of golgappa is "watery bread" or "crisp sphere eaten."  The filling is made by lightly mashing boiled potatoes with black salt, salt, some spices, a generous portion of tamarind pulp (made by mashing ripe tamarind in tamarind water), chilli (powder/chopped/boiled & pasted). The tamarind water Tetul Jol is made by mixing tamarind and spices/ salt .Preparing pudina vala pani and masala for panipuri at home is not only a healthier way of enjoying it but also allows you to customize it the way you like it.   To make the pani, get the mint, coriander, chilli and tamarind pulp ready.   Ingredients : slices of bread2 butter1 tbsp + 1 tbsp for grilling  dark chocolate 3 tbsp cheese 2 tbsp chocolate sauce 1tbsp + 1 tbsp for garnish  Method: Take two slices of bread and apply butter on the top side of all the two slices. Add the chocolate sauce on top of the butter on both side of bread.  Add grated dark chocolate on one of the bread slices. Add the grated cheese on top of the grated chocolate. Then take the buttered bread and place it upside down on the loaded bread. Apply butter on the top of the bread slice. And land the sandwich upside down on a grill pan and apply butter on the other side of the bread.  Grill until you get a golden brown colour from both sides. It took one minutes for me to reach that stage. You can also toast the sandwich Ina toaster. Methi Bombil Recipe is very easy, quick and tasty recipe. Can be prepared at lunch or dinner as side dish. It is blend of small methi, dry bombil (Bombay duck), onion, tomato, potato and few spices. Ingredients: 2 big onions 1 tomato I potato  10 bunches of small methi 3 green chillies  1/2 tsp turmeric  Salt to taste 3 tbsp oil 10 dry bombil (Bombay duck) Method: In pan add oil, when hot add sliced onion saute till translucent.  Add dry bomil saute on high flame for two minutes. Add potato cook till 80%. Now add chopped green chillies, chopped tomato, turmeric powder,  chopped methi, salt as per taste.  Cover and cook till all cooked. Ready to serve.   Quick, easy and delicious milkshake Recipe. Black forest milkshake is combination of milk, ice cream, chocolate, chocolate chips and cherries. Ingredients: 250ml milk + 1 small cup (boiled and cooled) 2 tbsp ice cream scoop  1 tbsp custard powder  1 tbsp cocoa powder  2 tbsp sugar 1 tbsp choco chips cherries to garnish  choco shots chocolate cake (crumbled and cut to small pieces) Method: Boil the milk, when boiled add sugar stir till sugar dissolved.  Add the mixture of milk small cup added to it custard powder, coco powder.  Again take a boil and cook on simmer for five minutes. Switch off the flame and cool the milk in room temperature and when cooled keep it in refrigerator for at least two hour. Assemble in serving glass.  Put cake pieces then pour the milk mixture, put again cake pieces, crumbled cake mixture, ice cream scoop, choco chips, choco shots and cherries.  Decorate with fancy spoon and straw.   Chicken Cafreal is a spicy chicken preparation prepared widely in the Indian state of Goa. The preparation originated from the Portuguese. It is blend of fresh green herbs, garam masala powder, almond and tamarind marinated, fried and cooked.  Ingredients: 1 kg chicken (cut to medium size washed thoroughly apply salt) 1 bunch coriander leaves 6 green chillies  10 garlic cloves  1"ginger 1 tsp garam masala powder  8 almond (soaked in water for fifteen minutes) Small lemon size tamarind  3 tbsp oil to fry Salt to taste  Method: Grind coriander leaves, green chillies, garlic, ginger, tamarind, almond, garam masala powder with little water to fine paste. Marinate chicken with the paste. In a pan add oil and shallow fry the chicken, cook both side till the chicken is done. Chicken Cafreal is ready to serve.   Mango Mastani is a famous desert drink from Pune, basically a thick Milkshake with ice cream scoop with topping of chopped mangoes and dry fruits.  Ingredients: 3 Alphonso mangoes (1 chopped to garnish and other two sliced to puree) 2 cups milk 2 scoop of ice cream to puree and 2 scoop to garnish (vanilla flavor) 2 tsp sugar 1 tsp tutti-frutti to garnish  Cherries to garnish   Method: In a blender jar add sliced mango, milk, sugar and ice cream scoop blend it. Assemble in a serving glass or serving cup by adding chopped mango, pour the blended mixture (milkshake). Scoop the ice cream on top. Garnish chopped mangoes,  tutti-frutti and cherry.  Mango Mastani is ready to serve. Note:  Can divide one recipe into two parts. Prawns Ambotik is Goan cuisine. It is hot(spicy) and tangy(sour) curry. Hot spices well blended with tamarind and Kokum which form sour component and give ambotik flavor to the curry. Ingredients: Kashmiri whole red chillies( deseed and soaked in water for 20 minutes). garlic 7 cloves ginger1" 12 black pepper  1/2 tsp cumin seed 1/4 tsp turmeric powder  1 small lemon size tamarind  kokum 4  oil 2 tsp salt per taste 2 onions chopped  1 tomato chopped green chillies slit  sugar a pinch Prawns 25 nos (cleaned, developed,washed thoroughly apply salt and turmeric) Method: Grind paste: red chillies, garlic,ginger, black pepper, turmeric, cumin, tamarind add little water and make fine paste. In a pan add oil when hot add chopped onions saute till translucent.  Next add tomato fry till cooked.  Add slit green chillies, kokums, sugar and paste cook five minutes.  Add prawns stir fry for two minutes.  Add paste and cook for five minutes.  Add water as per gravy, salt to taste.  Take a boil

Kanda Bhaji is a street food/evening tea time snack. It is very popular recipe and a famous street food of Maharashtra. Ingredients: 6 sliced onions  8 tbsp gram flour (besan) 1 tsp red chilli powder  1/2 tsp coriander powder  1/4 tsp turmeric powder  Salt to taste  1/4 tsp ajwain  1 tbsp coriander leaves chopped  2 cup oil for frying  Method: Slice the onions thinly.  Add the sliced onion in a mixing bowl.  Add the above spices, salt and rest of the ingredients.  Deep fry the bhaji in hot oil.  Serve it with pav and chutney.  Note: Slice the onions evenly and add salt keep for five minutes, onion leaves the water, this stage add the gram flour crush nicely till all merge together. Murg Badami/ Badami Chicken/ Chicken Korma.

Badami Murg is an almond based gravy dish blended with spice and cream. Very easy and quick recipe. Ingredients: 1 kg chicken  12 almond (soaked in water for fifteen minutes) 3 onion (fryed) 1 tbsp ginger/garlic paste  3 tbsp oil 1 tsp red chilli powder  1 tsp coriander powder  1/4 tsp turmeric powder  1 tsp garam masala powder  2 tbsp dedicated coconut powder  1/4 cup curd 2 tbsp fresh cream  salt to taste  4 cloves 1" cinnamon  4 black pepper  Method: Put oil in pan add whole spices. Now add ginger/garlic paste Saute. Add chicken and fry it till chicken changes colour.  Add beaten curd stir fry  Add all the dry spices (powder) Little water add cook the masala. Next add paste of fried onion and almond. Water add as desired consistency and salt as per taste.  Simmer and cook fifteen minutes or till chicken is done. At last add fresh cream and simmer two minutes. Murg Badami is ready to serve.  Note:  Can soak almond for an hour and peel the skin. Use fresh curd and fresh cream.  W

Chicken Moilee is a traditional East Indian curry recipe made with chicken or duck. This is a very popular East Indian cuisine prepared festive in every East Indian families. Easy, quick and tasty recipe.  Ingredients: 1 kg Chicken 5 onion sliced 2 potatoes 2 green Chillies sliced  1"inch ginger sliced  8 cloves garlic sliced  2 tbsp oil for cooking   2 tbsp oil to fry chicken  2 tbsp oil to fry the potatoes 1 tbsp Vinegar  2 tbsp Bottle Masala 1 tsp Turmeric powder  1 big glass water Method: Apply salt, turmeric powder to the chicken and only salt to potatoes. Fry the potatoes and chicken pieces in a shallow frying pan separately and keep aside.  In a deep vessel, heat 2 tbsp oil and saute the onions, till onions are light brown in colour. Rajma/Kidney Bean is a flavorful curry simmered in a gravy of onion and tomato served with jeera rice/plain rice or roti. Ingredients: 1/4 kg rajma (soak ten hours or overnight) 1 onion big 4 tomatoes medium  7 garlic cloves 1" ginger  2 green chillies  1 tsp red chilli powder  1 tsp coriander powder  1/4 haldi 1 tsp garam masala  1 bay leaves 1 black cardamon  1 stick cinnamon  1/4 tsp cumin Salt to taste  2 tbsp oil Method: Pressure cook rajma with cinnamon, black cardamon, bay leaves, salt to taste and water cook till rajma is done. In a pan add oil put jeera when splutter add paste (onion, tomato, ginger, garlic and green chillies). Add dry masala powder (red chilli, powder,coriander powder, turmeric powder,  garam masala powder). Add boiled rajma, salt and water as per consistency and boil till done.           Note:                Rajma soak at least for ten hour.             Pressure cook the rajma on fast gas               one whistle and than on slow flame for

Ingredients: 1 kg chicken on the bone 6 Nos dried red chillies 2 tbsp ginger/ garlic paste 1 tbsp Pepper powder for marination Juice of one full lemon salt to taste 2 tbsp Oil  cinnamon 2" cloves 7 nos pepper 10 nos  cardamon 4 nos 4medium Potatoes  (cut into slices and fried in a pan separately) Method: Heat oil in a pan and add in the whole spices. When the spices begin to splutter add the marinated chicken and mix well. Cover and cook the chicken for approx. 20 minutes or till the chicken is down Open the cover and dry up the liquid.  Adding potato is optional and can add pinch turmeric while frying. Ready to serve.
