Chicken Xacuti Recipe/ Goan Chicken Gravy/ Goan Cuisine/ Showmerecipe.

 Xacuti or Xacutti is a curry prepared in Goa, India, with complex spicing, including white poppy seeds, sliced or grated coconut and dried red chillies. It is usually prepared with chicken or lamb. Chicken Xacuti Recipe is a delicious chicken curry from Goa, is served along with pav. You can serve it along with rice instead, which makes an equally good combination.

Ingredients:

First green paste-

  • 4 cloves garlic 
  • 1"ginger 
  • 7 sprigs coriander leaves
  • 1 sprig curry leaves

Second masala paste-

  • 1 tsp oil
  • 2 tbsp coriander seeds
  • 1" piece cinnamon
  • 1 green cardamom
  • 6 cloves
  • 2 petals star anise
  • half of a mace(javithri/jathipathiri)
  • 7 Kashmiri whole red chillies
  • 1 tsp pepper corns
  • 1 tsp cumin whole
  • a pinch of fenugreek seeds
  • a pinch of ajwain
  • a pinch of nutmeg powder/grated nutmeg
  • 1 tbsp poppy seeds
  • 1 tbsp tamarind paste

Third paste-

  • 1 cup grated coconut 
  • 1 sliced onion

 Ingredients to Bagar-

  • 750 gm chicken with bones
  • 1 medium-sized onion
  • 2 bay leaves
  • 3 tbsp oil
  • a big marble-sized piece of tamarind soaked in water 
  • water for gravy + as needed for grinding
  • a pinch of turmeric powder
  • 1 tbsp red chilly powder(as needed
  • salt to taste

  • For garnish:
  • finely chopped coriander leaves

Method:

  1. Chop the chicken into medium-sized pieces. Rub with turmeric, red chilli powder and salt marinate and keep for half hour. 
  2. In pan put 1 tsp of oil, fry all the dry ingredients as given in above second list and then let it cool and grind.
  3. Next roast onion and grated coconut till it's nice and brown. Cool down and grind to a fine paste.
  4. Soak the tamarind in ½ cup water for some time, squeeze it and keep ready. 
  5. In a frying pan take 2tbsp of oil, bay leaves and saute the onion. 
  6. Next, add the ground masala paste, saute for a minute and then add the marinated chicken. Saute till the meat changes color, add water as per gravy consistency, add tamarind water and salt as needed and let cook till the chicken is done and the gravy thickens and garnish coriander leaves. 
  7. Serve it with plain white rice and salad.
  8. Goans prefer to have this mostly with pavs or dinner rolls, and sometimes with flatbreads and rice.

Note:

  • Can substitute chicken to mutton.
  • Spice and salt adjust as per taste.
  • Can marinate overnight and keep.
