Medu Vada Recipe, How To Make Medu Vada Recipe.

Medu vada recipe is the famous recipe from south, but it is recognise all over India. It is also known as Ulundhu vadai. Vadas is savoury fried snacks from India.

We find different types of vada recipe like fritters, doughnuts, dumplings, there are also vadas prepared from legumes, potatoes. Vadas are accompained with various dips, chutney or sauces. It is served as breakfast or snacks.

Medu vada is prepared with urad dal (black gram). Ingredients added to this recipe are chopped onion, green chillies, ginger, sliced fresh coconut, curry leaves, shaped like doughnuts and deep fried. I have added one more ingredients in this recipe that is raw rice, it makes the vada more crisp and soft and served with coconut chutney.

Step By Step Method

1. Soak rice and urad dal separately for four hours. Then make paste adding very little water. Remove the better in a bowl and add chopped onion, ginger, green chillies, curry leaves, coriander leaves, sliced coconut and salt as per taste mix all well.

2. Put oil in a pan for deep frying the Medu vadas.

3. Now wet your fingers in bowl of water.

4. Take lemon size ball and flat it with thumb.

5. Now make a hole with thumb.

6. The shape is like doughnut.

7. Drop it in hot oil gently.

8. Fry both the side till golden brown.

9. Remove the vadas on tissue paper, the excess oil is absorbed by the tissue paper and vadas are ready to serve.

10. Serve the Medu vadas with coconut chutney.

Preparation Time: 4 hours + 20 minutes
Cooking Time: 20 minutes
Serves: 3-4

Ingredients:
  • Urad dal (black gram)- 1 cup
  • raw rice- 1/4 cup
  • onion- 1 no chopped
  • green chillies- 3 nos chopped
  • ginger- 1 tbsp chopped
  • curry leaves- 10 nos chopped
  • coriander leaves- 1 tbsp
  • fresh coconut- 2 tbsp sliced
  • salt to taste
  • oil for deep frying
Method:
  1. Soak the urad dal and rice separately for at least four hour, then grind them together.
  2. Now in the bowl take the batter, add chopped onion, green chillies, ginger, sliced fresh coconut, salt, chopped curry leaves and chopped coriander leaves mix well.
  3. Heat oil in a kadai till hot enough, you can drop a small amount of batter to check if the oil is hot if the batter raises means the oil is become hot.
  4. Wet your hands, we need moist fingers, take small portions of batter, shape to a ball, slightly flatten with thumb, dip the thumb in water, make a hole in the centre, and drop in the hot oil gently, and repeat with remaining batter.
  5. Fry both the side till golden brown.
  6. Remove it and transfer on tissue paper.
  7. Medu vada is ready.
  8. Serve it with coconut chutney.

Notes:
  1. To make the vadas crispy, keep the batter in refrigerator for half an hour.
  2. To check oil is hot drop a small amount of batter in oil, if the oil is hot the batter raises.
  3. Add very little water to grind the soaked urad dal and rice.
  4. If the batter becomes thin consistency, then add rice flour to it and mix nicely.
Tips:
  • Mix 300 gm of 'amla' powder and 100 gm of 'ginger powder'. Take one teaspoon of this mixture with a little water in the morning and evening everyday. It will protect you against cold and improve digestion. Honey can also be added to make a perfect health drink.
