Step By Step Method


1. Heat oil allow it to become hot.

2. Add the panch phoron and allow it to splutter.

3. Add chopped green chillies and chopped ginger.

4. Add the chopped tomatoes.

5. Add red chilly powder.

6. Add turmeric powder.

7. Add coriander powder.

8. Add three tablespoon water and cook the masala for two minutes.

9. Add the potatoes.

10. Add little water and stir fry the potatoes.

12. Add water as required for gravy, give a boil, then reduce the flame and simmer and cook for ten minutes.

Ingredients:

  • potatoes- 3 nos 
  • tomatoes- 3 nos
  • panch phoron-1 tsp
  • green chillies- 3 nos 
  • ginger- 1/2" chop
  • red chilly powder- 1 tsp
  • coriander powder- 1 tsp
  • turmeric powder- 1/4 tsp
  • oil- 4 tbsp
  • salt to taste
  • water as required for gravy
Method:
  1. In pan put oil, add panch phoron (1/2 tsp cumin, 1/4 tsp mustard seed, 1/4 tsp nigella, 1/4 tsp fennel seed, pinch fenugreek seed).
  2. Let the seed crackle, now add chopped ginger and chopped chillies and saute.
  3. Now add chop tomatoes and saute till oil leaves the side.
  4. Add boil smashed  or cubed potatoes and mix it nicely.
  5. Add red chilly powder, coriander powder, turmeric powder and three tablespoon water and cook the masala for two minutes.
  6. Now add water as required for gravy and salt as required.
  7. Give a nice boil, then reduce the flame and simmer and cook for ten minutes.
  8. Aloo tamatar sabzi is ready to serve.
  9. Serve it with pooris or chapaties.

Notes:
  • If tomatoes are sour then add little sugar while cooking. 
  • Can add garam masala at the end of cooking for more aromatic flavor.
  • Can cube the boil potatoes or crush with hand.
