Prawns Ambotik is Goan cuisine. It is hot(spicy) and tangy(sour) curry. Hot spices well blended with tamarind and Kokum which form sour component and give ambotik flavor to the curry. Ingredients: Kashmiri whole red chillies( deseed and soaked in water for 20 minutes). garlic 7 cloves ginger1" 12 black pepper  1/2 tsp cumin seed 1/4 tsp turmeric powder  1 small lemon size tamarind  kokum 4  oil 2 tsp salt per taste 2 onions chopped  1 tomato chopped green chillies slit  sugar a pinch Prawns 25 nos (cleaned, developed,washed thoroughly apply salt and turmeric) Method: Grind paste: red chillies, garlic,ginger, black pepper, turmeric, cumin, tamarind add little water and make fine paste. In a pan add oil when hot add chopped onions saute till translucent.  Next add tomato fry till cooked.  Add slit green chillies, kokums, sugar and paste cook five minutes.  Add prawns stir fry for two minutes.  Add paste and cook for five minutes.  Add water as per gravy, salt to taste.  Take a boil

Kanda Bhaji Recipe/Pyaz Ke Pakode/Crunchy Onion Pakoda Recipe.

Kanda Bhaji is a street food/evening tea time snack. It is very popular recipe and a famous street food of Maharashtra. Ingredients: 6 sliced onions  8 tbsp gram flour (besan) 1 tsp red chilli powder  1/2 tsp coriander powder  1/4 tsp turmeric powder  Salt to taste  1/4 tsp ajwain  1 tbsp coriander leaves chopped  2 cup oil for frying  Method: Slice the onions thinly.  Add the sliced onion in a mixing bowl.  Add the above spices, salt and rest of the ingredients.  Deep fry the bhaji in hot oil.  Serve it with pav and chutney.  Note: Slice the onions evenly and add salt keep for five minutes, onion leaves the water, this stage add the gram flour crush nicely till all merge together. Keep oil temperature perfect before frying and when bhaji is dropped to oil fry the bhaji on slow medium fame. Murg Badami/ Badami Chicken/ Chicken Korma.

Badami Murg is an almond based gravy dish blended with spice and cream. Very easy and quick recipe. Ingredients: 1 kg chicken  12 almond (soaked in water for fifteen minutes) 3 onion (fryed) 1 tbsp ginger/garlic paste  3 tbsp oil 1 tsp red chilli powder  1 tsp coriander powder  1/4 tsp turmeric powder  1 tsp garam masala powder  2 tbsp dedicated coconut powder  1/4 cup curd 2 tbsp fresh cream  salt to taste  4 cloves 1" cinnamon  4 black pepper  Method: Put oil in pan add whole spices. Now add ginger/garlic paste Saute. Add chicken and fry it till chicken changes colour.  Add beaten curd stir fry  Add all the dry spices (powder) Little water add cook the masala. Next add paste of fried onion and almond. Water add as desired consistency and salt as per taste.  Simmer and cook fifteen minutes or till chicken is done. At last add fresh cream and simmer two minutes. Murg Badami is ready to serve.  Note:  Can soak almond for an hour and peel the skin. Use fresh curd and fresh cream.  W

Chicken Moilee is a traditional East Indian curry recipe made with chicken or duck. This is a very popular East Indian cuisine prepared festive in every East Indian families. Easy, quick and tasty recipe.  Ingredients: 1 kg Chicken 5 onion sliced 2 potatoes 2 green Chillies sliced  1"inch ginger sliced  8 cloves garlic sliced  2 tbsp oil for cooking   2 tbsp oil to fry chicken  2 tbsp oil to fry the potatoes 1 tbsp Vinegar  2 tbsp Bottle Masala 1 tsp Turmeric powder  1 big glass water Method: Apply salt, turmeric powder to the chicken and only salt to potatoes. Fry the potatoes and chicken pieces in a shallow frying pan separately and keep aside.  In a deep vessel, heat 2 tbsp oil and saute the onions, till onions are light brown in colour. Now add sliced ginger, garlic and chillies and stir fry it. Now add bottle masala and fry for a minute. Add a water to avoid burning of masala. Add vinegar and add water as per required for gravy. Rajma/Kidney Bean is a flavorful curry simmered in a gravy of onion and tomato served with jeera rice/plain rice or roti. Ingredients: 1/4 kg rajma (soak ten hours or overnight) 1 onion big 4 tomatoes medium  7 garlic cloves 1" ginger  2 green chillies  1 tsp red chilli powder  1 tsp coriander powder  1/4 haldi 1 tsp garam masala  1 bay leaves 1 black cardamon  1 stick cinnamon  1/4 tsp cumin Salt to taste  2 tbsp oil Method: Pressure cook rajma with cinnamon, black cardamon, bay leaves, salt to taste and water cook till rajma is done. In a pan add oil put jeera when splutter add paste (onion, tomato, ginger, garlic and green chillies). Add dry masala powder (red chilli, powder,coriander powder, turmeric powder,  garam masala powder). Add boiled rajma, salt and water as per consistency and boil till done.           Note:                Rajma soak at least for ten hour.             Pressure cook the rajma on fast gas               one whistle and than on slow flame for

Ingredients: 1 kg chicken on the bone 6 Nos dried red chillies 2 tbsp ginger/ garlic paste 1 tbsp Pepper powder for marination Juice of one full lemon salt to taste 2 tbsp Oil  cinnamon 2" cloves 7 nos pepper 10 nos  cardamon 4 nos 4medium Potatoes  (cut into slices and fried in a pan separately) Method: Heat oil in a pan and add in the whole spices. When the spices begin to splutter add the marinated chicken and mix well. Cover and cook the chicken for approx. 20 minutes or till the chicken is down Open the cover and dry up the liquid.  Adding potato is optional and can add pinch turmeric while frying. Ready to serve. Easy breakfast recipe. It tastes great as the Omelette are soft, fluffy and the chips gives their crispness and melted cheese yummy. Ingredients: 2 Eggs 1handful potato chips of your choice (I used plain salted chips) 1 green chillies – chopped (Optional) 1 tsp cooking oil 1 tbsp shredded cilantro or coriander leaves to garnish (or your favorite fresh herb) 1 tbsp shredded cheese of your choice — I used  mozzarella (Optional) Salt to taste pinch turmeric powder  pinch paprika powder  Method: Heat oil in a pan over medium heat Add the chips. (do not fry/cook them – we don’t want them soggy!) Whisk the eggs,pinch turmeric powder and adjust salt (go very light on salt, since the chips are salty enough. I usually don’t have to use extra salt.). Pour them over the chips, as evenly as possible.
