Shahi Tukda Recipe/ Double Ka Meetha / Indian Bread Pudding/ Showmerecipe
Shahi Tukda or Shahi Toast is a royal dessert made by deep frying the bread, soaking it in sugar syrup, and then drizzling it with thick luscious rabdi, this delight is one of the best yet easy to make it at home. This sweet Shahi tukda recipe will be loved by kids of all ages and the plate will be clean before you know it! Shahi tukda or 'Double ka Meetha' is a Hyderabadi delicacy that is really easy to make at home and is perfect to serve after a nice and filling meal. The name itself is reminiscent of its royal background, wherein it was often served after lavish meals.
Ingredients
Thickened Milk or Rabdi:
• 750 ml whole milk
• 4 tbsp sugar
• 3-4 cardamom pods crushed or powdered
• 2-3 saffron strands
• 1 tbsp almond chopped
• 1 tbsp cashew chopped
• 1 tbsp pistachios
• 2 bread (crushed)
Sugar Syrup or Chachni:
• 250 gm sugar
• 100 ml water
Bread Pieces:
• 6-7 bread slices cut in half diagonally
• 4 tbsp ghee
Instructions:
To prepare Thicken milk or Rabdi:
• In a saucepan over medium heat, bring whole milk and evaporated milk to a simmer. Then add cardamom pods and sugar and let it cook on low heat for an hour or until reduced in half.
• Add saffron strands and chopped dry fruits to finish it off.
To prepare the sugar syrup or Chachni:
The sugar and water to a boil until the syrup achieves two-thread consistency.
Take off the stove immediately.
To prepare Shahi Tukada Bread:
• Toast or shallow fry bread slices in ghee or butter until they are crisp and lightly browned.
• Coat in sugar syrup and lay out on your serving tray.
To Assemble Shahi Tukda:
• Arrange all the syrup coated slices in a neat pattern.
• Then pour the cream or Rabdi all over slowly to ensure all pieces soak up the milk. Garnish with chopped nuts.
• Ready to serve.
• Now let the Shahi Tukrey chill in the fridge covered with cling film wrap.
• By the next morning, the bread slices will have soaked up most of the milk and the rest of the milk will be pretty thick.
• Can also serve hot.
NOTES:
You can deep fry the bread in ghee.
Adjust the sugar according to your preference. You can skip soaking in sugar syrup if you like less sweet.
Keep everything ready and assemble at the time of serving.
Can serve hot or cold.
