Patoli is also known as Patoleo is steamed rice dumplings stuffed with coconut and jaggery, wrapped in fragrant turmeric leaf. The beautiful aroma of fresh turmeric leaves makes these Patholi (rice dumplings) special. When they are steam cooked, the aroma of turmeric leaves gets mingled with rice dumplings, giving it a distinctive flavor and aroma.Patoleo or patoli or patolyo is a traditional recipe occasionally prepared on special occasions like Shravan Sunday, Nagpanchami, Tay/Hartalika day during Ganesh Chaturthi by the Hindus and on 15 August for the feast of assumption of Mother Mary festival celebrated by the East Indians (Mumbaikar), Goans and Mangalorean's.
Ingredients for Patoli Recipe:
• Rice flour 1 cup
• Turmeric leaves 8 (wash and wipe the leaves and cut to halve)
• Pure ghee as required
For stuffing:
• Jaggery (gur) grated 1/2 cup
• Coconut scraped 1 cup
• 1 tbsp cashew nuts
• 1 tsp cardamon powder
Method:
In a bowl take rice flour, add water and make better as per dosa consistency.
Take coconut in a pan and roast lightly.
Add jaggery, chopped cashew nuts and cook for five to seven minutes.
Now add cardamom powder and switch off the flame.
Set aside to cool.
Heat water in a steamer.
Apply ghee on the shining side of the turmeric leaves.
Spread a little rice batter on each leaf.
Put a spoonful of the coconut stuffing and fold the leaves sideways.
Place them in the hot steamer and cover. Cook for twenty minutes.
They can also be made in banana leaves.
When done, peel off the leaves, dribble a little ghee and serve hot.
Notes:
• Cut these turmeric leaves according to the size of the steamer or container
• If you don’t have a steamer, a pressure cooker, or any cooking utensil can be used. Here fill with some water below, then place the cooking stand in water, and place the cooking tray on this stand with these patolyo layed. Cover it and steam it.
• Can add Goan Jaggery or Sugarcane Jaggery.
