Wafer Omelette Recipe/ Omelette With Potato Chip/ Omelette Recipe


Easy breakfast recipe. It tastes great as the Omelette are soft, fluffy and the chips gives their crispness and melted cheese yummy.

Ingredients:

  • 2 Eggs
  • 1handful potato chips of your choice (I used plain salted chips)
  • 1 green chillies – chopped (Optional)
  • 1 tsp cooking oil
  • 1 tbsp shredded cilantro or coriander leaves to garnish (or your favorite fresh herb)
  • 1 tbsp shredded cheese of your choice — I used  mozzarella (Optional)
  • Salt to taste
  • pinch turmeric powder 
  • pinch paprika powder 

Method:

  1. Heat oil in a pan over medium heat
  2. Add the chips. (do not fry/cook them – we don’t want them soggy!)
  3. Whisk the eggs,pinch turmeric powder and adjust salt (go very light on salt, since the chips are salty enough. I usually don’t have to use extra salt.).
  4. Pour them over the chips, as evenly as possible. Swirl the pan once slightly, to let the runny eggs spread through the chips. 
  5. Sprinkle green chillie, coriander leaves, paprika powder and grated cheese. 
  6. Switch stove to medium-low heat and cover and cook for two minutes (so the eggs don’t burn) and cook for a little bit till the eggs have just set. The chips should still be crunchy.
  7. Take off from stove and transfer to a serving platter. 
  8. Serve them beside toasted bread or pao and your favorite hot sauce or ketchup. 

Note: When we add chips do not fry chips or else chips becomes soggy.
