Gavar Bhaji Recipe, How To Make Gavar Bhaji


Gavar or Gawar or Gawarachi bhaji or Guar phalli or Goru chikkudu, or Kothavara, also known as Cluster beans. It is very tasty, easy and quick recipe.

We find gavar bhaji in East Indian (Mumbai) houses, specially in their wedding menu and this recipe I have prepared in East Indian method.

 It is prepared adding, onion,  chillies, grated coconut. Maharashtrian prepare adding potato. Rajasthani dry this vegetable in sun and store it and prepare this vegetable during monsoon. Sindhi recipe Sindhi curry is incomplete without Gavar bhaji. It is worth trying this recipe.

Preparation Time : 15 minutes
Cooking Time : 20 minutes
Serves : 3-4

                      Step By Step Method:

Wash and make Gavar pieces evenly

Heat oil, when hot add chop onion sauté it.

 Add chop green chillies

 Now add red chilli powder and turmeric powder.

Add sugar and salt stir and allow it to cook till bhaji is done.

 Serve it garnishing fresh grated coconut.

Ingredients :
  • 1/4 kg Gavar
  • 2 chopped onion
  • 3 chopped green chillies
  • 4 cloves crushed garlic
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilly powder
  • 1 tsp sugar
  • salt to taste
  • 3 tbsp oil
  • 4 tbsp fresh grated coconut
Method :
  1. Heat a pan, add oil when oil is hot add chopped onion sauté till translucent, add green chillies and crushed garlic.
  2. Add to it Gavar ( washed and break it evenly), sauté it for few minutes.
  3. Now add turmeric powder, red chilly powder, sugar, salt and stir it nicely.
  4. Cover it with a lid, and put some water on lid (doing this bhaji will not burn) cook till bhaji is done and keep stiring occasionally.
  5. Now add grated coconut give o cook stir, cook for two minutes and turn off the flame.
  6. Garnish fresh grated coconut and serve with chapati.

Note:
  • Add sugar or it will taste little bitter.
  • While breaking the Gavar bhaji remove the side strings or the vegetable will not cook fast.
Tips :
  • Gavar or Cluster beans vegetable provide protein and fiber.
  • It is good for diabetics, help to manage blood pressure and improves blood circulation.
